PB Cocoa Protein Lava Cake
This weeks recipe is so yummy I sort of wanted to eat the whole batch…… and the macros are so good I totally could have!
I made this lava cake in from start to my mouth in under 10 minutes (YES!) so it’s great for a craving that will keep you on track.
Macros on this puppy… only 7 carbs, 2 fat and 11 protein.
Here’s what you need:
- 1 Scoop peanut butter protein powder ( I used Quest)
- 1/4 Cup Skim Milk
- 1 Tablespoon coconut flour
- 2 teaspoons coco powder
- 1 packet of Truvia
- 1 egg
- 1 teaspoon baking powder
Preheat oven to 350F, stir it all together and put into 4 muffin cups.
Cook for about 5 -6 minutes.
Keep your eye on it! The inside should be runny (a la ‘Lava’) and and the top sort of crusty over. I’m not sure if that’s a technical cooking term, but you’ll see! If you make them, Instagram or tweet me at #NutritionNinja so I can see!
